About Chef Sho Ito
Sho Ito, born in 1989 in Akita Prefecture, has a rich culinary background, having trained for seven years at Mutekiro in Yokohama before working for a year at Alexandre’s in Paris. After returning to Japan, he joined the opening team of Les Copains de Dominique Bouchet, which earned a Bib Gourmand the same year. He became head chef in 2017 and quickly gained recognition for his culinary achievements.
In 2020, he was a finalist in the sixth Asia contest of the Pâté en Croûte World Championship and then became the champion of the Japanese contest in 2025, bringing his expertise to the international stage.
Chef Ito’s passion lies in illuminating traditional French home-cooked dishes that have faded from memory, revising them for modern times, and spotlighting the allure of classic French cuisine alongside Chef Dominique's vision.
