However, as storage prolongs, sprouting and respiration become active, leading to a decrease in sugar levels, particularly evident in 'Kitakari,' 'Touya,' and 'Meikui' varieties. These fluctuations in sugar content and sprouting progress significantly impact the texture and color of products, prompting Kenko Mayo to rigorously manage storage and identify varieties suitable for salads.

Ensuring Safety with Glycoalkaloids



Safety measures regarding glycoalkaloids, such as solanine and chaconine, were also discussed. Known for their potential to cause food poisoning, these compounds tend to accumulate in sprouts and green skins of potatoes. The presentation highlighted how sprouting and exposure to light lead to an increase in glycoalkaloid concentrations, varying significantly among different varieties and even parts of the same potato. Kenko Mayo emphasized the importance of risk assessment and an ongoing monitoring system at the raw material stage to bolster safety management in their production processes.

Domestic Potato Varieties and Future Breeding



According to data from the Seed and Seedling Management Center, the number of registered potato varieties in Japan fluctuated from 85 varieties in 2019 to 65 in 2022, and 70 varieties in 2023. Varieties like 'Sayaka,' 'Piruka,' 'Haruka,' and 'Ayutaka' stand out due to their smooth surfaces, facilitating easier peeling and suitability for cooking and processing.

In recent years, the issue of disease caused by the potato cyst nematode has highlighted the benefits of resistant varieties, such as 'Sayaka.' Kenko Mayo actively incorporates these resilient breeds while valuing domestically developed varieties.
