Daito Corporation Opens New Izakaya 'TOMO BANYA' in Ginza, Celebrating 98 Years of Culinary Heritage

Daito Corporation Launches 'TOMO BANYA' Izakaya in Ginza

On September 2nd, Daito Corporation, a renowned entity with a 98-year history, officially opened 'TOMO BANYA' in Ginza, Tokyo. Known for its commitment to promoting Japanese culinary traditions, the company aims to bring a modern twist to the traditional izakaya experience. This new establishment is particularly notable for its direct engagement between chefs (itamae) and customers, embodying the theme of 'the future of itamae.'

A Legacy of Culinary Excellence in Ginza

Founded in 1927, Daito Corporation has been a cornerstone in Japan's food culture, establishing restaurants that span a variety of styles, including sushi, washoku (Japanese cuisine), and yakiniku. With approximately 70 years of experience in the Ginza area, the company has cultivated a rich dining culture that resonates with both local and international patrons. 'TOMO BANYA' is strategically located in the same building where the first branch of Daito’s 'Banya' brand once stood, reinforcing the brand's commitment to the local community while leveraging synergy among its existing twelve restaurants in the area, including 'Kitaouji' and 'GINZA SUSHI BANYA KAI.'

Embracing a Modern Itamae Experience

'TOMO BANYA' aims to redefine the perception of chefs in contemporary dining. While the chef profession is highly respected, many younger and international diners often feel intimidated by traditional settings. Daito Corporation strives to bridge this gap by promoting a more accessible and enjoyable chef-to-customer relationship. This approach encourages chefs to exercise creative freedom and engage diners in the culinary process, allowing them to experience the artistry of Japanese cuisine firsthand.

The menu will primarily feature traditional Japanese dishes infused with elements from Western and Chinese cuisines, providing a more liberated dining experience categorized as 'creative itamae izakaya cuisine.' Customer feedback will play a pivotal role in determining menu offerings, ensuring that the dining experience evolves through interaction between diners and chefs, fostering a sense of community. Addressing the issue of chef shortages within the industry, Daito Corporation hopes to transform the image of the itamae profession to attract a newer generation of culinary enthusiasts.

Unique Dining Experience

At 'TOMO BANYA,' patrons can enjoy a unique dining setup centered around omakase, where the chef crafts a personalized course for guests. The open kitchen design allows diners to witness the chefs’ skills in action, stimulating an interactive and lively atmosphere. This engaging environment encourages open dialogue between customers and chefs, enriching their understanding of the ingredients and dishes being served. Fresh seafood is sourced directly from carefully selected locations, ensuring top-notch quality. Additionally, the drink menu features a selection of sake, wine, shochu, craft beer, and craft gin.
