This iconic chocolatier from Osaka plans to unveil two groundbreaking products: "Re-cacao" and "Sea Cacao." Both utilize unconventional methods of chocolate production, intertwining concepts of sustainability and culinary creativity.

Re-cacao: A Chocolate Renaissance


"Re-cacao" is a remarkable chocolate tablet made from cacao powder, carefully sourced from the high-quality cacao of Trinidad and Tobago. The process involves selecting, roasting, and pressing cacao beans to extract cacao butter and powder simultaneously. This innovative chocolate represents a circular approach to cacao use, reimagining waste by turning leftover cacao powder from white chocolate production back into a delectable treat.

What makes "Re-cacao" special is its attempt to respond to the soaring global cacao prices through better understanding and utilizing the cacao material, ensuring nothing goes to waste. With a price tag of 1,620 yen for a 50g bar, this product will be available for pre-sale from January 15 to January 20 at the Salon du Chocolat, before hitting the shelves in their Tokyo and Osaka locations in early February.

Next, we have "Sea Cacao," inspired by Chef Saegusa's ambition to experiment with seawater in confectionery. Instead of simply using salt derived from seawater, this innovative approach consists of soaking cacao beans directly in actual seawater. This method imparts a rich and complex mineral taste to the chocolate, going beyond mere saltiness.

The cacao for this product hails from Bali, Indonesia, known for its lush surroundings, while the seawater is filtered through coral from Ise-Shima. This harmonious blend of ingredients, aptly named "Sea Cacao," allows chocolate lovers to embark on a unique tasting journey, infused with the essence of the ocean. With a price of 2,160 yen for a 50g bar, this chocolate will also be available for purchase during the same event.
