Wako, a renowned chocolate brand located in Ginza, Tokyo, has introduced its latest seasonal dessert, the SHIKI Parfait - FUYU. Debuting on December 1 and available until February 28, this parfait is a celebration of winter's bountiful flavors, priced at ¥3,960 (tax included). Known for more than 35 years as a pioneer chocolatier, Wako continues to uphold its traditions while delighting customers with innovative offerings.

A Seasonal Sensation


The SHIKI Parfait series has evolved to reflect the distinct flavors of each season. FUYU, the fourth installment, showcases a delectable combination of apple and spices that create a winter-themed chocolate parfait. Each layer of the parfait offers a delightful interplay of textures and flavors, starting with slow-cooked apples that reveal their full essence when paired with a rich red wine jelly and a vibrant berry sauce, spiced with cinnamon and clove.

The deep, complex notes of carefully selected dark chocolate blend seamlessly with the fruitiness, creating a dessert that evolves with every bite. Topped with fresh, tart red apples and a berry sauce infused with fragrant spices, the rich chocolate ice cream is enhanced by delicate shavings of white chocolate and whipped cream.

The parfait’s middle layers feature a delightful white chocolate crunch and pastry crust, complementing the apple compote’s refreshing finish. The lower layer unfolds with a hint of cinnamon ice cream and chocolate sauce, married together with red wine jelly, painting a quiet picture of the deepening winter.

Introducing SHIKI Chocolat - FUYU


Alongside the SHIKI Parfait, Wako also presents the SHIKI Chocolat - FUYU, available in limited quantities from December 1 to February 28.

Each piece, priced at ¥648 (tax included), showcases innovative flavors:
  • - Fraise Framboise: This piece features a white chocolate base stuffed with strawberry ganache and raspberry pâte de fruit, topped with crispy raspberries, combining fruity tanginess with a light texture.
  • - Pomme Cannelle: Here, apple ganache layers are paired with a delightful mixture of praline and crispy feuilletine, enriched with cinnamon for a layered texture that offers a deep, flavorful experience.

Chef Profiles


The mastermind behind these exquisite creations is Chef Yudai Ono, who began his culinary journey at a pastry school and advanced to become the pastry chef at the Michelin-starred Ogashira family estate. As of 2022, he serves as the sous chef pâtissier at Wako and is anticipated to become the head pastry chef in April 2024. Chef Ono has garnered numerous awards over the years, showcasing his impressive skill set and dedication to pastry art.

Alongside him is Nana Aioka, the sous chef chocolatier at Wako, who graduated from Tsuji Culinary Institute in Tokyo and made notable contributions at InterContinental Tokyo Bay before joining Wako. Her accolades include several prestigious awards, reflecting her talent and creativity in chocolate artistry.
