From May 19 to July 31, 2025, the Teppan Tenyu, located at BELLUSTAR TOKYO in Shinjuku, will host the "Ishigaki Island Gourmet Fair." Guests can indulge in a unique dining experience featuring the famed "Ishigaki Kita Uchi Farm Premium Beef" alongside breathtaking panoramic views from approximately 200 meters above ground, where the majestic Mount Fuji can be admired. This culinary event marks the second anniversary of the hotel, showcasing the best of Ishigaki's culinary offerings.
The Culinary Genius Behind the Menu
Chef Nobuko Kimura has a deep passion for the Ishigaki Kita Uchi Farm Premium Beef, which is produced in the lush environment of Ishigaki Island, Okinawa. This rare black wagyu is raised exclusively from female cows with desirable genetics, spending at least 40 months in breeding. As a result, only four heads are produced each month, making this beef exceptionally rare. The extended breeding period reduces the melting point of the fat, increases the amino acids responsible for umami, and delivers a smooth, melt-in-your-mouth experience, complemented by rich flavors and an aromatic profile.
The menu will include expertly grilled roasts that enhance the savory qualities of the beef's fat alongside its deep, red meat flavor.
An Array of Exquisite Tropical Ingredients
Complementing the premium beef are a variety of ingredients sourced from the region's bountiful tropics. Guests will be treated to homemade Jimami tofu, island garlic, and fresh lobster, alongside six varieties of salt from Ishigaki Island and barrel-aged soy sauce from Yuasa, Wakayama. These ingredients are combined with special seasonings to truly bring out the natural flavors of the dishes. Attendees also have the option to replace their regular rice with Yaeyama soba or indulge in delightful desserts made with locally sourced pineapples and mangoes, completing a course that represents the culinary treasures of Japan's southernmost islands.
Furthermore, a wine pairing option is available, featuring four different wines starting from champagne, along with a selection of Okinawan juice and awamori served in unique Ryukyu glasses to add a festive finish.
Guests can look forward to an extraordinary evening filled with engaging interactions with the chef, and a sensory experience where the vibrant aromas and sounds of cooking enhance the overall enjoyment of the meal.

Chef's Profile
Nobuko Kimura, originally from Nagoya, Aichi Prefecture, transitioned from various careers into the culinary field after gaining experience abroad. After joining Nagoya Tokyu Hotel in 2006 and developing her skills in banquet cooking, she fell for the allure of teppanyaki. In 2019, she assisted in launching the Teppan Yamazakura at Cerulean Tower Tokyu Hotel, focusing on mentoring others along her culinary journey. Now at Teppan Tenyu in BELLUSTAR TOKYO, she expresses her passion for connecting guests with producers while ensuring top-quality meat that meets rigorous standards.
