Mochimen: A Culinary Revolution in Udon
Opened in Shibuya on July 31, 2025, Mochimen specializes in Udon noodles, tackling a significant challenge in the restaurant industry – food waste. Traditional Udon shops typically prepare noodles in advance, but the quality decreases after about 20 minutes, leading to waste. For a restaurant with around 30 seats, this could mean discarding approximately 100 kg of noodles a month. However, Mochimen has developed a method of creating delicious Udon while adhering to sustainable practices.
The Science Behind Mochimen Udon
One aspect that sets Mochimen apart is its approach to cooking. Unlike the typical Udon, which can only be held for about 20 minutes, Mochimen's noodles can be stored for up to an hour thanks to their patented cooking method. This unique process prolongs the noodle's lifespan so that even refrigerated leftovers maintain their quality for the next day, allowing for the creation of new flavorful dishes using previously prepared Udon.
Introducing the Egg Sauce Spicy Udon
One of the standout dishes at Mochimen is the Egg Sauce Spicy Udon, priced at 500 yen. This dish features deep-fried Udon noodles topped with a hot, homemade egg sauce and spicy chili oil. The combination creates an irresistible texture, reminiscent of soft fried rice cakes. The sweet and sour egg sauce complements the crispy noodles for a refreshing taste, while the chili oil adds an enticing kick. Due to the limited number of servings made from leftover noodles, only around 10 portions will be available daily.

Mochimen is defined by its commitment to food waste reduction and quality. The restaurant offers a unique Udon experience, diverging from traditional styles such as the firm Sanuki or the softer Ise Udon. The goal is to achieve a “mochi-like texture,” reminiscent of tapioca. They use domestically sourced wheat that is carefully matured to create a distinctive noodle. Each bite provides a slippery feel, bouncy chewiness, and a gum-like resilience, resulting in a texture unlike any other.
The broth at Mochimen is a masterpiece, crafted from more than 100 ingredients to derive a rich and flavorful “golden broth.” Customers are encouraged to savor every last drop of the Udon, making the dining experience even more enjoyable.
