Discover Summer's Delight: Tosa Buntan Dessert
In an exciting collaboration, Futaba Fruits Parlor in Shinjuku is offering a limited-edition dessert featuring the Tosa Buntan citrus, typically enjoyed in winter, reimagined for summer. This innovative creation, known as Tosa Buntan à la Mode, showcases the unique flavors of this fruit, thanks to a freshness preservation technology from ZEROCO Inc.
A Groundbreaking Culinary Collaboration
Futaba Fruits Parlor partnered with Cafe Company to craft this summer-only dessert from Tosa Buntan sourced from Kochi Prefecture. Utilizing ZEROCO's state-of-the-art preservation methods, these fruits retain their spring-like freshness for about five months, allowing you to enjoy their vibrant taste during the hot summer months. This initiative not only promotes regional produce but also exemplifies how innovative technology can bridge seasonal gaps, bringing fresh experiences to food enthusiasts.
The dessert is overseen by renowned fruit pastry chef Haruki Okada, known for his mastery in creating sweets that highlight seasonal fruits. Using every part of the Tosa Buntan—from the zest to the flesh and juice—he expertly pairs the citrus with panna cotta, jelly, chocolate ice cream, and a crunchy granola topping, delivering not just flavor but a feast for the eyes.
Dish Details
The Tosa Buntan à la Mode will be available for a limited run of 50 servings, each priced at 800 yen (tax included: 880 yen). It will officially begin serving on July 25, 2025, at Futaba Fruits Parlor, located on the fifth floor of Shinjuku Marui Main Building. Once sold out, it will not be restocked.
To maximize the refreshing sweet and tangy profile of the Tosa Buntan, this dessert combines the notable acidity of the fruit with a velvety panna cotta and fruity jelly. The Tosa Buntan itself is used as a bowl, ensuring that no part goes to waste—creating a truly indulgent experience.
What Makes Tosa Buntan Special?
Kochi Prefecture is renowned for its premium Tosa Buntan, distinguished by its firm flesh and juicy texture, which harmoniously balances sweetness with a refreshing acidity. A unique trait of this fruit is that its flavor deepens through controlled storage, enhancing its complexity.
With ZEROCO’s advanced preservation method maintaining optimal conditions at about 0 degrees Celsius and nearly 100% humidity for five months, these oranges are presented at their peak condition. Often difficult to find outside their harvest season, this limited availability offers a rare tasting opportunity for fans.
