Kappa Sushi has announced an exciting addition to its menu with the upcoming release of the Hakata Tonkotsu Cappuccino Ramen, crafted in collaboration with the popular ramen shop Hakata Issou. Scheduled to launch on April 17, 2025, this innovative dish is part of Kappa Sushi's renowned Authentic Ramen Series, now in its 32nd iteration.

This unique ramen concept draws inspiration from the bustling ramen scene of Hakata, where Hakata Issou has become a beloved establishment shortly after its opening. Known for its delicious ramen, Hakata Issou has established a strong following within just a year of its debut, and now, its signature pork bone cappuccino soup is coming to Kappa Sushi.

The Hakata Tonkotsu Cappuccino Ramen aims to replicate the exquisite flavor of the cappuccino-style soup that ramen enthusiasts rave about. Each bowl of this ramen is specially prepared with a technique involving a blender that whips the soup into a frothy delight, resulting in a creamy and smooth texture that perfectly complements Kappa Sushi's original noodles.

This ramen dish isn't just about presentation; it also packs a flavorful punch. The rich broth is made from simmering pork bones, including heads and leg bones, to create a hearty and robust flavor that truly sits at the heart of Hakata's ramen culture.

The Hakata Tonkotsu Cappuccino Ramen will be available in three variations:
1. Hakata Tonkotsu Cappuccino Ramen - Starting from 540 yen (tax included), this bowl showcases the creamy foam and the deep, savory broth that Hakata Issou is known for.
2. Twice the Char Siu - Priced at 590 yen (tax included), this version doubles the amount of succulent char siu, providing a juicy and aromatic enjoyment.
3. Spicy Takana Topping - Also 590 yen (tax included), this option includes spicy takana, a common topping in tonkotsu ramen, adding a touch of heat.
4. Spicy Takana Rice Add-On - For an additional 150 yen (tax included), you can enjoy the signature rice of Kappa Sushi as an add-in, soaking up the flavorful broth.

A Legacy of Flavor


Founded in 2012 by the Yamada brothers, who trained at a famous Hakata ramen shop, Hakata Issou has a reputation for its clean and modern atmosphere, along with a rich and mild broth that appeals to both locals and visitors alike. The brothers are dedicated to crafting a bowl that embodies the robust yet smooth flavor profile that defines their soup.

In a statement, Hakata Issou shared, “We've worked hard to replicate our delicious tonkotsu soup in detail for this collaboration. Since June 2018, the Authentic Ramen Series at Kappa Sushi has focused on bringing the flavors of renowned ramen shops closer to customers. The series started with the Ebi Ramen, which exceeded 100,000 servings within just ten days of its launch, and has expanded to include various famous ramen restaurants from Hokkaido to Fukuoka.

With over 17 million servings sold by March 2025, the series continues to gain popularity among customers who enjoy the idea of eating authentic ramen at a conveyor belt sushi restaurant.
