Exclusive Collaboration Dinner by Shangri-La Tokyo and Restaurant Petrus

Shangri-La Tokyo, nestled in the heart of Marunouchi, invites culinary enthusiasts to indulge in an extraordinary dining experience. From September 3rd to 5th, 2025, the hotel will host a limited-time collaboration dinner between its modern Italian restaurant, Piacere, and the prestigious Michelin-starred contemporary French restaurant, Petrus of Island Shangri-La, Hong Kong.

During this exclusive event, guests will have the rare opportunity to savor eight exquisite courses under the guidance of two culinary masters – Uwe Opocensky, the Executive Chef of Island Shangri-La’s Petrus, and Toyoki Furuya, the head chef of Piacere. On September 3rd and 5th, Chef Opocensky will present a pop-up dinner, showcasing his signature dishes and innovative creations incorporating seasonal Japanese ingredients. Meanwhile, the highlight of September 4th will be a one-night-only four-hands dinner, featuring a collaborative menu that combines Chef Opocensky's artistry with Chef Furuya's seasonal Italian dishes.

A Culinary Journey

Chef Uwe Opocensky has an impressive background, with over 33 years of culinary experience worldwide. Since 2017, he has been leading the kitchens of seven restaurants at Island Shangri-La in Hong Kong. Before this, he held the title of Executive Chef at Mandarin Oriental Hong Kong from 2007 to 2016 and initially made his mark as the owner and executive chef of his eponymous restaurant, “UWE.” His dedication to crafting a memorable dining experience is reflected in his use of premium, meticulously selected ingredients to create harmonious flavors that delight the senses.

On the menu during the collaboration dinner, diners can expect to experience Chef Opocensky’s signature dishes that reflect his innovative take on French cuisine while highlighting the freshness of Japanese seasonal ingredients with an eight-course tasting experience designed specifically for this occasion. The four-hands dinner will bridge the culinary styles of both chefs, offering a unique blend of flavors that celebrates both Italian and French cuisines, emphasizing the beauty of seasonal ingredients and seasonal changes.

Chef Toyoki Furuya, in charge of Piacere, has been the head chef since 2019, bringing a wealth of experience from working at luxury hotels such as Grand Hyatt Tokyo and The Peninsula Tokyo. Known for his commitment to using local produce, including Kamakura vegetables and fresh seafood from Sagami Bay, Chef Furuya is passionate about capturing the essence of Japanese seasons in his dishes, ensuring a unique gastronomic experience for every guest.
