Tokyo Port Brewing, the sole sake brewery in Tokyo's 23 wards, has launched a groundbreaking product - 'Sustainable Sake Project Air,' a pure rice ginjo sake made with water extracted from air. This innovative endeavor is part of their ongoing commitment to environmental sustainability.
The World’s First Sake Made with Air-Derived Water
This new sake is created using water generated by the Air Drip Water AQ-20XR, a state-of-the-art air-to-water converter developed by AquaM. This device efficiently absorbs moisture from the air, purifies it through a high-performance filtration system, and then enriches the water with essential minerals before bottling it. The result is a safe, delicious beverage that meets the stringent quality standards set by Japan’s Water Act.
Crafted from 100% Yamadanishiki rice sourced from Hyogo Prefecture, ‘Air’ boasts a rich and full-bodied flavor that expands beautifully on the palate. With an alcohol content of 15% and a polishing ratio of 60%, it represents a delicate balance between tradition and innovation.
Second Phase of the 'Sustainable Sake Project'
'Air' is the second installment in Tokyo Port Brewing's 'Sustainable Sake Project.' The first phase focused on reducing water usage by 1/14 through a unique method of brewing that eliminates the washing process for rice. This latest release takes a daring step further by redefining the very essence of water used in sake production.
According to the master brewer, Yoshinori Terasawa, the aim is to communicate a new set of values related to environmental consciousness through sake that respects water resources.
A New Paradigm of Brewing
Terasawa, known for his pioneering role among microbreweries, runs the business in a modest 52 square meters space in Tokyo. He has gained recognition for producing award-winning sake despite the small scale, firmly believing that limited production enables the maintenance of quality and the freedom to innovate. Producing roughly 150 koku (a traditional Japanese measurement for sake) annually, his focus remains on quality, sustainability, and creativity.

About Tokyo Port Brewing
Founded in 1812, Tokyo Port Brewing has a rich history rooted in the Edo period. The brewery originally started as a sake shop following significant historical events in Japan. After nearly a century of sake production, the company transitioned in the early 20th century. In 2011, under the leadership of the seventh generation president, Shunichi Saito, they reestablished the brewing business to preserve and promote traditional Japanese sake for future generations.
In remembering the trials of historical figures who frequented their original premises, the brand 'Edo Kaijo' was born, honoring their legacy with every bottle.
