Louis Dirocco's Journey from Manager to Restaurant Owner in Florida's St. Cloud

Louis Dirocco's Journey: From General Manager to Restaurant Owner

At only 26 years of age, Louis Dirocco has made a remarkable transition from being the general manager of Beef 'O' Brady's to owning not just one but two locations in Central Florida. His story is one of ambition, hard work, and a deep connection to the community and the franchise itself.

Dirocco's journey began at the young age of 15, when he started working at a local McDonald's. By 16, he had already taken on the role of shift lead. After spending four years at Keke's Breakfast Cafe, he made the move to Beef 'O' Brady's, where he worked under the guidance of former Mount Dora owner Ed Conlan. Over the years, Dirocco immersed himself in all aspects of restaurant operations—from serving customers and cooking meals to bartending and eventually managing the team. This comprehensive experience not only honed his skills but also helped him build solid relationships with his coworkers and patrons.

In a pivotal moment that would shape his career, Conlan approached Dirocco with an opportunity to buy the restaurant. "I've been a server, a cook, a bartender and a general manager. I can literally run every single position in the restaurant," he expressed. This thorough understanding of every role inside the restaurant is a unique advantage that Dirocco leveraged to succeed.

On October 1, 2025, Dirocco took a significant step by purchasing the Mount Dora restaurant. However, his aspirations didn't stop there. Driven by a desire for growth, he reached out to the area franchise director about available locations in Central Florida. Two weeks later, Dirocco received news about three potential sites, and St. Cloud stood out as the ideal option.

Reflecting on his rapid growth, Dirocco stated, "It all happened so fast. My goal now is to keep building these restaurants, stay focused, and eventually own four Beef 'O' Brady's locations." His ambitions highlight not only a personal quest for success but also a commitment to providing a welcoming atmosphere for families and sports enthusiasts alike.

What attracts Dirocco to Beef 'O' Brady's is its family-friendly ambiance and an established operating model that aligns with his vision. He has spent years learning the ins and outs of the brand, which gives him a significant advantage as a new owner. He understands the customer expectations and community-centered approach that has driven the franchise's success.

Dirocco also emphasizes the importance of balancing business with family time. With his family's support, he believes that creating inviting spaces for neighborhood gatherings is vital. Despite the challenges that come with running a busy restaurant, he remains steadfast in his commitment. "This is not easy. The work we do inside these restaurants is not light by any means, and there are a lot of high-stress situations we have to handle," he confessed, underscoring the dedication and resilience required in the hospitality industry.

As he continues on this exciting journey, Dirocco shares wisdom with aspiring restaurateurs. He advises staying focused, remaining humble, and consistently putting in hard work. His experience shows that although the restaurant business can be demanding, it is also incredibly rewarding.

Beef 'O' Brady's overall legacy is one of community connection and sports enthusiasm, making it a beloved hub for friends and families. With over 120 locations nationally, franchise opportunities remain available for those eager to join this family-oriented brand. Dirocco’s evolving story of ownership and commitment to community is sure to inspire many in the bustling world of restaurant business.
