The Sushikage Project, run by BIllion Foods, has garnered attention for its innovative approach to sushi preparation. Utilizing young talent, the project operates out of a borrowed space in Roppongi's renowned Sushi Muku, where the team features a mouthwatering menu of Edomae sushi. The project draws its inspiration from the ephemeral beauty of the mayfly (kagerou), representing both the fleeting nature of time and the dedication of these aspiring chefs.

Background of the Sushikage Project



Since its inception, the Sushikage Project has served over 18,000 customers, making it a significant platform for upcoming sushi chefs to refine their skills in a real-world environment. With a menu overseen by the experienced team behind Sushi Asahi, guests can expect top-quality sushi made with fresh seasonal fish sourced directly from Toyosu Market.

Thanks to the project’s focus on purchasing fish in the early hours, costs have been kept low while maintaining the highest standards of quality. With growing popularity, early reservations are encouraged, especially as weekends often reach maximum capacity.

Exclusive Sushi Experience



The main highlight of the project is the Sushi Kage 15 Piece Course priced at just ¥3,000 (¥3,300 including tax). Here, patrons can indulge in a variety of seasonal fish expertly prepared with aromatic red vinegar rice. This is a rare chance to enjoy traditional Edomae sushi without breaking the bank.

  • - Capacity: 20 guests per day (ideal for 1-2 guests)
  • - Reservation System: Reservations must be made in advance and will close once capacity is reached.

Sushi and drinks can be ordered additionally from the original Sushi Muku/Sushi Shirogane, but reservations can only be made online. Phone reservations are not accepted.
