Fuji Tenpura Soba is an exciting new culinary venture by
Four Seasons Inc., located in the scenic
Gotemba Premium Outlet at the foothills of
Mount Fuji. This establishment offers an exceptional dining experience with its focus on fresh, seasonal ingredients that showcase the region’s natural bounty.
The Essence of Authentic Tempura and Soba
At
Fuji Tenpura Soba, guests can indulge in expertly crafted tempura made from an array of seasonal treasures sourced from the rich waters of
Suruga Bay and the flavorful vegetables grown in the
Hakone region. Carefully selected ingredients, such as
Mishima vegetables cultivated at elevations above 50 meters in a warm and humid plateau, are prepared to highlight their natural sweetness and flavor.
Each piece of tempura is cooked in a delicate batter using a blend of
cottonseed oil and
pure sesame oil, accompanied by domestically sourced wheat flour for a light and crispy texture that brings out the true essence of the ingredients.
The tempura is served with a special sauce made from a concentrated broth of
kombu and
katsuobushi (dried bonito) combined with mirin and soy sauce, adding depth to every bite. Freshly grated
daikon radish from
Shizuoka revitalizes the dish, while two types of salt –
Okinawa salt and
‘Tenku no Matcha’ (matcha from the sky) from Shizuoka – are offered to enhance the flavors even further.
Soba Made Fresh Daily
Along with the tempura, diners can enjoy soba made from
Aizu buckwheat flour, ground on-site using a traditional stone mill. This dedication results in
freshly milled, freshly made, and freshly boiled soba that boasts a rich aroma and flavorful experience.

Premium Course featuring fresh sashimi caught in local waters, such as
hon-maguro (bluefin tuna) and various sizzling tempura selections. Guests can also savor the
Tempura Set, which showcases seven carefully curated dishes, and choose from a variety of soba or mini rice bowls to accompany the tempura.
