Expansion of AI Sommelier ‘KAORIUM for Sake & Wine’ Across Tokyo’s Natural Lawson Stores

Introduction


SCENTMATIC Inc., led by CEO Toshiharu Kurisu, is set to expand its AI sommelier system, KAORIUM for Sake & Wine, into over 50 Natural Lawson stores in and around Tokyo by July 9, 2026. This follows a successful initial rollout at 133 locations, enhancing both customer experience and wine selection.

Transforming the Wine Selection Experience


The KAORIUM for Sake & Wine system offers a unique way to choose sake and wine by visualizing flavors through words. This AI technology not only simplifies the complex flavors of various beverages but also curates personalized recommendations based on the customer’s mood and flavor preferences. Whether a customer is looking for something refreshing or fruity, KAORIUM analyzes the available items and suggests the best match.

The program began trial runs in November 2025 at six stores and expanded in May 2026 to 17 more locations. Now, more customers will benefit from this innovative wine selection method as it expands further.

How Does It Work?


At participating Natural Lawson stores, customers can use KAORIUM devices to answer simple questions about their preferences. The AI then recommends wines suited to their current mood and desires. In addition, the program features 21 new pairing suggestions that combine food items with various wines, enhancing the overall shopping experience. From snacks to desserts and baked goods, customers can discover exciting matches that elevate their dining experience.

A total of 50 stores across Tokyo and its suburbs are expected to adopt this system. However, some locations may experience adjustments to their implementation timelines.
