A Culinary Journey through Japanese Tradition
What's even more remarkable about Tsurutokame is that the restaurant is run entirely by female chefs and staff, a groundbreaking initiative that not only provides a unique culinary perspective but also empowers women in a traditionally male-dominated field. Saito Atsumi, the second-generation head chef, took the helm in 2022 and is passionate about presenting the essence of Japanese cuisine.
The dishes are crafted using the principles of the five flavors (sweet, salty, sour, bitter, and spicy) and five colors (white, black, yellow, red, blue), which are essential in Japanese culinary art. By skillfully employing different cooking methods—such as cutting, boiling, grilling, steaming, and frying—Saito and her team maximize the natural flavors of each vegetable, turning every meal into an unforgettable experience.
A Feast for the Senses
Guests will find their plates beautifully arranged, much like an afternoon tea presentation, showcasing the vibrant colors and variety of each seasonal ingredient. The combination of flavors aims not only to satisfy hunger but also to cleanse the spirit and invigorate the body, fulfilling the philosophy of Shojin cuisine.
Tsurutokame believes in the power of food to nourish not just physically but spiritually as well. Each meal served is an opportunity to appreciate and reflect upon nature's bounty. Diners are invited to unwind in the restaurant’s tranquil atmosphere, where modern aesthetics meet traditional Japanese values.
Empowering Women in Cuisine
Founded in 2015 by Shuko Mikuni, the establishment aims to uplift the role of women in the culinary world. Inspired by her own experiences, Mikuni aspired to create a space where women chefs could shine. This endeavor has resulted in a unique dining environment where every plate tells a story of dedication, culture, and aesthetic beauty.
