Ingredients That Sing


At the heart of the Symphony course lies an ensemble of premium ingredients including wagyu beef, caviar, and foie gras. The journey begins with a smoked bite featuring the rich flavors of buri (winter yellowtail) paired with caviar. This is followed by visually stunning plates, such as a colorful vegetable and scallop terrine sealed with a savory consomme jelly and a luxurious foie gras and duck cannelloni.

As the course progresses, diners will savor a rich fusion of grilled abalone with cedar miso and yuzu risotto. The grand finale comes in the form of the main dish: the charcoal-scented Hayama Queen Beef served with beet coulis and a rich red sake reduction that exquisitely highlights the beef’s umami. Finally, guests can indulge in a sweet finale of a cake infused with Japanese red tea and citrus, maron glacé, and a delightful scoop of truffle ice cream accompanied by dried persimmon and apricot confections.

The Symphony menu features a total of seven dishes that celebrate the essence of autumn:

2. Vegetable Dish: Colorful Vegetables Soup with Scallop Terrine

This exquisite dining experience will be available from September 1st to November 30th at a price of ¥12,000, which includes a sparkling champagne toast. For an elevated experience, guests can opt for the pairing option, featuring four carefully selected drinks for ¥16,000.
