The event centered around the theme "Innovation for FIVE WIN—Creating Happy Sweeteners through Rice Koji Fermentation." It served as a platform for lively discussions among participants and speakers about the future of fermentation and the possibilities inherent in rice. Notable presentations included one from Koizumi of Oryza, where attendees sampled products derived from rice koji, such as amazake and granola, gaining insights into new food values.

Tsunan Brewery showcased three distinct sakes:

  • - Tsunami White: This flagship sake was awarded the prestigious Niigata Governor's Award in the 2024 brewing year, symbolizing high quality and excellence.
  • - GO LUNAR: A forward-thinking limited edition sake created using innovative fermentation and aging techniques, representing the future vision of Tsunan Brewery.
  • - GO SPARKLING GOLD: A sparkling sake that captures the delicate and vibrant essence of fermentation, offering a refreshing experience.
