The two standout entries are the “Coconut Panna Cotta” from the 20s category and the “Sweetfish Steamed with Leeks” from the 30s and 40s category. Guests will have the opportunity to savor these dishes as part of exquisite kaiseki or course meals. Each dish reflects Nadaman's commitment to using quality Japanese ingredients while presenting fresh, modern concepts.

Developed by Maya Morita, a participant from the 20s category, this dish features a delicate blend of flavors resembling a tropical paradise. The silken coconut panna cotta is beautifully contrasted with amber-hued hojicha jelly and vibrant matcha sauce, creating a stunning visual presentation. Morita expressed her desire to match her love for coconut with traditional Japanese elements, resulting in a dessert that brings the refreshing flavors of orange and tea into harmony. According to Morita, seeing the judges' impressed reactions made her feel fulfilled, regardless of the competition's outcome.

Sweetfish Steamed with Leeks - A Flavorful Encounter


Created by Tomohiro Tasaki from the 30s and 40s category, this dish draws inspiration from Cantonese cooking while incorporating Japanese ingredients and techniques. The deep-fried sesame tofu adds a delightful toastiness, contrasting with the rich umami flavors of the sweetfish. Finished with a drizzle of heated sesame oil over the steamed leeks, the aroma elevates the dish, perfectly marrying the flavors and textures.

Tasaki dedicated his entry to creating a dish that would resonate with customers, aiming to entice them to visit Nadaman restaurants. He described the final judging experience as intensely nerve-wracking yet invaluable, especially when he received praise for his creation from the judges.

The Concept Behind the Contest



Launched in May 2025, this internal contest aims to inspire chefs and promote excellence within Nadaman. Divided into five categories including 20s, 30s and 40s cooking, a creativity award, and a service excellence award, over 77 entries were submitted. Through rigorous evaluations, the top contestants were selected for final judging where an esteemed panel, including the president and head chefs, assessed the entries based on taste, presentation, and narrative.

According to Chef Suzuki, who emphasized the initiative's focus on nurturing young talent, the contest was designed to allow chefs to express their creativity while honoring traditional values. With more than 190 years of history, Nadaman continues to innovate within the culinary world.
