Experience the Autumn Flavors of Shinshu
From October 1 to November 30, 2025, the Karuizawa Marriott Hotel invites you to indulge in a unique culinary experience with its new autumn dinner course,
"Prime Shinshu -Autumn-", available at the restaurant
Grill & Dining G. This exclusive menu beautifully fuses seasonal ingredients from Shinshu, renowned for its rich flavors, with the area's unique fermentation culture, traditionally rooted in Nagano Prefecture.
Once guests step into the restaurant, they are welcomed with dishes that celebrate the bounty of Shinshu's natural produce, skillfully crafted by the hotel's chefs to highlight authentic French cooking techniques. This fall, the spotlight is on seasonal fermented ingredients such as locally sourced miso, shio-kōji (salt koji), and kome-kōji milk, all of which are meticulously integrated into each course to draw out the deep flavors of the main ingredients.
The dining experience begins with three amuse-bouches showcasing the culinary artistry of local produce. Highlights include:
- - Sanma No Confit with Shishito Pepper
- - Foie Gras Terrine flavored with 10-Year-Aged Miso
- - Seasonal Fruit with House-Made Prosciutto
Next, guests can relish the
appetizer consisting of
Shinshu Salmon Tartare wrapped in Buckwheat Crepes with blue cheese sauce, followed by a second appetizer where
French Duck Breast Marinated in Shio-Kōji is served alongside fig confit and crispy burdock chips.
Moving onto the
soup course, diners will enjoy a creamy soup featuring
Shinshu's Autumn Mushrooms, accompanied by deep-fried maitake, enriching the autumnal dining experience. For the
fish dish, a succulent
Sea Bream Aquapazza prepared in a sizzling skillet showcases seafood flavors, crafted with Shinshu’s white wine and semi-dried Amedra tomatoes, intensifying every bite.
The
meat dish features the grand flavors of
Shinshu Premium Beef Sirloin and Fillet, perfectly grilled and complemented with local red wine sauce, pumpkin puree, and seasonal fruits such as persimmons – ensuring the meal remains extraordinary until the end.
To accompany the meal, the restaurant also introduces the
NAGANO WINE Discovery ~Autumn~ tasting set, featuring three exquisite wines from
Rudovan based in Nagano's eastern city of Tomi. Guests can sample the
Kyoho Sparkling,
Sauvignon Blanc, and
Trio ‘22, carefully selected by the hotel’s J.S.A. Certified Sommelier Excellence. This set presents a unique opportunity to experience the rich diversity of Nagano wines.
