Human Development Fund and Sunday Salmon Revitalize Meal Programs in Castle Rock, Colorado

Human Development Fund Partners with Sunday Salmon

The Human Development Fund (HDF) has announced an exciting collaboration with Sunday Salmon, a nonprofit restaurant located in Castle Rock, Colorado, to enhance and restore essential meal delivery services for vulnerable residents in the community. This partnership, initiated to tackle food insecurity, comes at a crucial time when many individuals, including seniors and families, are facing challenges accessing nutritious meals.

HDF's support will fully fund Sunday Salmon's Wednesday Wheels program for the next two months. This initiative focuses on delivering organic and allergy-friendly meals to individuals on tight budgets, including seniors, adults with intellectual and developmental disabilities, and families grappling with food insecurity. With rising demand, Sunday Salmon had previously been compelled to cut back its meal deliveries from a weekly to a bi-weekly schedule, leading to an unfortunate waiting list of 80 individuals. However, the fresh influx of funding means that the program can now resume its weekly service.

Thanks to HDF's commitment, Sunday Salmon will increase its meal deliveries from approximately 180 to 210 meals each week, effectively reducing the waiting list from 80 to 50 individuals. This represents a significant step forward in ensuring that more community members receive the nutrition they need. As highlighted by Abdirahman Kariye, the Founder and CEO of HDF, the core mission of humanitarian service is acknowledging and fulfilling the needs of every person, irrespective of their location. "When we learned that seniors, individuals with disabilities, and families in Castle Rock were at risk of losing consistent, nutritious meals, we acted. We are proud to partner with Sunday Salmon to restore these services and reach more of our neighbors," he stated.

Sunday Salmon, established by Mary Grothe in January 2025, has quickly become a lifeline for local residents, serving nearly 20,000 free meals in its inaugural year alone. Currently, the nonprofit is committed to providing approximately 1,000 meals weekly through community dining and delivery programs.

The collaboration underscores the broader impact of HDF's mission. In 2025, the organization provided over 3.5 million meals across its international programs, including more than 1 million hot meals. The partnership with Sunday Salmon marks a critical effort to extend its mission and support vulnerable populations within the United States.

This initiative is not just about delivering food—it highlights the importance of community and collective responsibility in nurturing those in need. Both HDF and Sunday Salmon represent a beacon of hope, showing what can be achieved when organizations and communities come together. For many, these meals are more than just sustenance; they represent care, connection, and dignity in the face of adversity.
