Ensuring Safe Meat Production Through Consumer-Driven Audits in Japan
On January 22 and 23, 2023, Palsystem Consumers' Cooperative Union and its subsidiary, Pal Meat Co., Ltd., held a two-day event called the “Public Verification Meeting” at the Pal Meat Yamagata Plant in Murayama City, Yamagata Prefecture. This event allows consumers to participate as auditors, inspecting the manufacturing processes and quality control systems for Palsystem's exclusive ham and sausage products.
A Unique System Rooted in Transparency
Founded in 1999, the Public Verification Meeting is based on Palsystem’s unique “two-party certification” system that fosters trust between producers and consumers. During this meeting, representatives from Palsystem acted as auditors, confirming paperwork and carrying out plant tours while interviewing staff to verify how product safety and the direct-to-consumer philosophy are put into practice.
Emphasizing Quality from the Beginning
On the first day, auditors entered the plant to observe the production processes of items like pork wieners and scrutinize relevant documentation. Notably, the plant utilizes domestic chilled pork known for retaining flavor better than typical frozen meat, ensuring a delightful taste in their hams and sausages. The former president, Hirotaka Kawanishi, shared insights from the company's establishment in 1984. He recounted how overcoming numerous challenges and being encouraged by participants to maintain their original commitment to quality led to their current standards.
