At the Fuji Marriott Hotel Lake Yamanaka, located in the scenic Yamanashi Prefecture, a unique dining experience awaits guests from December 1, 2025, through February 28, 2026. The hotel’s restaurant, Grill & Dining G, introduces the exclusive dinner course, "Terroir Yamanashi ~Sake Gastronomy~," where every dish creatively incorporates locally distilled sake along with seasonal winter ingredients.

This extraordinary culinary experience sets itself apart by using Yamanashi’s rich selection of sake not as a pairing beverage but as an integral part of each dish. From appetizers to desserts, the essence of sake—be it junmai sake, sake lees, or roasted sake—is beautifully intertwined with the flavors of winter delicacies such as crab and scallops.

Starting with an amuse-bouche, guests will savor a mille-feuille of Fujigane pork layered with winter vegetables, enhanced by a cream sauce made from Sasai Junmai Ginjo Koshu Yumeyamasui sake. What makes the course even more captivating is the presentation: the cedar plates used for serving are soaked in sake, releasing a delightful fragrance that sets the tone for the dining experience.

As for appetizers, guests can look forward to a trio of seasonal offerings. These include a delicate egg custard featuring snow-crab and lily root, served with junmai sake gelée infused with the essence of spring's early songbirds, and a sake lees sponge cake inspired by the snowy landscape of Lake Yamanaka.

For the main course, diners can enjoy the rich flavors of the grill. A luxurious Arita beef sirloin is served with a miso sauce infused with Fukutoku Junmai Sake, complemented by a sake galette. This dish perfectly balances the deep, complex flavors of the sake with the natural umami of the ingredients.

The sweet finale features a dessert inspired by the five flavors of Shichiken Honjozo—sweet, sour, bitter, spicy, and astringent—offering a mousse that delights the palate with its sugary notes and a hint of caramel bitterness.

Additionally, the course includes comforting seasonal beverages: a warm wine crafted from Yamanashi grapes, known as "Yamanashi Mulled Wine," and a rich hot chocolate, named "Chocolat Houtou," featuring Yamanashi’s famous houtou noodles as a topping.
