Under the leadership of Executive Pastry Chef Shinsuke Nakajima, who is the 5th generation of chefs to inherit the recipe, the 'Super Mont Blanc' captures the essence of autumn. The gastronomic creation is a testament to a legacy that has seen continuous evolution, ensuring that the rich taste of chestnuts shines through. Chef Nakajima's vision emphasizes the enjoyment of the true flavor of Japanese chestnuts, which call for meticulous ingredient selection and preparation methods.

This year, the hotel has welcomed its 7th generation chef, Yudai Moriyama, who brings fresh perspectives while upholding the traditional practices of Japanese pastry-making. The new rendition of the 'Super Mont Blanc' integrates the globally celebrated matcha into the classic recipe, creating a fusion that embraces both Japanese and Western culinary traditions.

The Ingredients: A Passion for Quality


Each year, the chefs at Patisserie SATSUKI carefully select the finest chestnuts for their desserts, ensuring that only the best varieties are used. For the 2022 season, the star ingredient is the 'Rihei' chestnut from Kumamoto Prefecture, renowned for its sweetness and rich flavor. In crafting the 'Super Mont Blanc', the chefs minimize the use of cream, allowing the full-bodied taste of the Rihei chestnut to dominate.

The dessert is supported by a base made from almond tart that contains Italian marron glacé. Layered atop are several exquisite components: a light yet fragrant matcha custard cream, sweet kuromitsu red bean paste, rich custard cream made with 'Taiyō Tamago' eggs, and airy matcha meringue. This combination of high-quality Japanese ingredients harmonizes beautifully, delivering a rich taste experience with every bite.

A whole piece of 'kanro-ni' sweetened chestnut from Kumamoto is also used, enveloped in fluffy cream from Kumamoto to enhance its sweetness. The masterfully piped chestnut paste incorporates a hint of 'Hingya salt' from Aogashima, balancing the flavors and providing depth to the decadent mont blanc.
