Chicken Salad Chick Expands Its Presence in Minneapolis with Basketball Family's Support

Chicken Salad Chick Expands into Minneapolis

After enjoying remarkable success as a pioneering fast-casual chicken salad restaurant, Chicken Salad Chick is set to broaden its reach significantly in the Minneapolis area. The brand, known for its inviting atmosphere and flavorful dishes, is partnering with the prominent Coffey family—whose name resonates deeply in Minnesota's basketball community—to open ten new locations across the region.

Founded in 2008 in Auburn, Alabama, Chicken Salad Chick has established itself as a household name with a diverse menu featuring over a dozen homemade chicken salad flavors alongside fresh salads, gourmet soups, and indulgent desserts. This expansion represents a vital step in the company’s growth strategy, particularly in the Upper Midwest, where it aims to build a robust presence.

The Coffey family, consisting of Richard, Sheba, Sydney, Nia, and Amir, boasts a rich history in basketball—each member has made a name for themselves in the sport, including accolades at state and national levels. They bring not only their athletic prowess but also their entrepreneurial spirit and a shared passion for community service. Richard and Amir have both played at the University of Minnesota, with Richard previously donning the jersey of the Minnesota Timberwolves, while Amir currently plays professionally. Sydney and Nia have also excelled in collegiate and professional basketball, with Nia entering her ninth season in the WNBA.
