Collaboration of TERAKOYA and Noguchi Sake Brewery Gives Birth to a New Dessert

A Delightful Fusion of French Cuisine and Local Sake



In the heart of Musashino, the renowned French restaurant, TERAKOYA, has teamed up with the historic Noguchi Sake Brewery, founded in 1860, to create an exquisite new dessert called 'Sake no Hana Sweets Silky'. This innovative mousse incorporates fragrant sake lees and olive syrup, resulting in a creamy dessert that tantalizes the palate with its unique flavors and textures.

The Story Behind the Collaboration



The journey to create 'Sake no Hana Sweets Silky' emerged from a deep appreciation for local ingredients and the desire to revitalize the local sake industry. After halting its sake production in 1985 due to urban development, Noguchi Sake Brewery's seventh-generation owner, Eiichiro Noguchi, was determined to revive the art of sake brewing. A unique opportunity arose when Tokyo University of Agriculture and Technology proposed using their newly developed rice variety, Sakura Fukuhime, for sake production. This led to the rebirth of local sake, Kozuru, after a 40-year hiatus.

The idea then came to utilize the leftover sake lees for dessert creation, and thus the collaboration with TERAKOYA began. The master chef, Mitsuo Ma, skillfully combined the aromatic sake lees with the luscious sweetness of high-quality olive syrup from Spain, yielding a mousse that is both creamy and filled with delightful flavors.

Unveiling the Mousse: Sake no Hana Sweets Silky



This mousse, priced at 490 yen (including tax) and packaged in a 90g container, is a testament to local tradition and sustainable practices. The name, Sake no Hana, reflects the beauty and nourishment that sake lees can provide. The mousse is crafted using meticulously selected ingredients, such as the award-winning Ando Farm's eggs from Yamanashi and cream cheese from Hokkaido, ensuring every bite is rich in flavor and quality.

The clever use of milk and a dash of both cream cheese and egg yolk results in an exceptionally smooth texture. The fragrant saka lees dance harmoniously with the fruity notes of the olive syrup, making each mouthful a unique experience.

Enhancing the Experience with Caramel Sauce



To elevate the dessert experience further, a complimentary caramel syrup—known as Karamitsu, consisting of caramel and black syrup—is provided. This sauce not only enhances the flavor but also allows for a custom experience; diners can adjust the sweetness to their liking while enjoying the unique undertones that a special herbal concoction adds.

In addition to its incredible flavor profile, Sake no Hana Sweets Silky is a sustainable creation, making the most of otherwise wasted ingredients from the sake brewing process.
