As guests look out at the breathtaking scenery of the Northern Alps, still adorned with remnants of snow against the lush green backdrop, they can indulge in a delightful culinary journey that showcases the best of summer in Shinshu. The dinner course highlights dishes crafted from fresh summer vegetables and other seasonal ingredients that celebrate the region’s rich culinary heritage.
Highlighted Course: LAVAROCK
One of the standout offerings is the "LAVAROCK" course, designed especially for the summer season by the hotel’s talented chef, Yasuda Kaoru. This course begins with amuses-bouches featuring homemade smoked pork ham from the cold climate of Hakuba, paired with sweet fruits that complement the savory flavors beautifully.
For the appetizer, guests can enjoy a marinated alpine white trout from Hakuba, infused with the aroma of thyme, elegantly presented alongside seaweed jelly and a vibrant array of colorful summer vegetables. This refreshing dish captures the very essence of the season.
Soup and Fish Dish
The soup course is a delightful gazpacho made from locally grown Hakuba tomatoes, showcasing their rich sweetness. It is accompanied by a crispy grissini wrapped in prosciutto, enhancing the overall flavor profile of this refreshing dish.
Moving to the fish course, diners will be treated to grilled sea bass with a unique twist. Chef Yasuda’s interpretation introduces a delicious eggplant caviar using eggplant from Ikeda Town, served alongside a special pepper sauce made with a renowned Niigata delicacy. This dish strikes a wonderful balance between the subtle flavors of the fish and the richness of the accompanying sauce.
Meat Dish and Dessert
The meat course features succulent slow-cooked pork loin from the Hakuba region, paired perfectly with roasted summer vegetables and a zesty pineapple salsa that highlights the dish’s flavors beautifully. It’s a harmonious combination that exemplifies the essence of summer dining.
To conclude the meal, guests will savor a miniature parfait made with summer strawberries from Hakuba, complemented by a peach sauce, yogurt ice cream, and a buckwheat galette, offering a sweet and refreshing finish to this extraordinary dining experience.
