Eighty One: A New Canvas for Culinary Art
On November 30, 2025, '81,' the innovative restaurant by renowned chef Kenji Nagashima, will officially open in Platinum, Tokyo. With the philosophy of "More than a restaurant," '81' sets out to redefine the relationship between gastronomy and art. Each guest will embark on a unique journey that intertwines exquisite seasonal cuisine with captivating visual art, creating an unforgettable dining experience.
Kenji Nagashima is a graduate of the legendary El Bulli, the three-Michelin-star restaurant in Spain, where he honed his craft before opening '81' in Nishiazabu and earning a Michelin star in his debut year. Located in a three-story building, the new '81' will feature a Chef's Table on the first floor, a reception and art gallery on the second, and a private lounge on the third, ensuring an immersive environment that engages all senses.
An Artistic Journey through Dining
As guests arrive, they will first step into a reception area that doubles as an art gallery, showcasing seasonal exhibitions designed to stimulate the mind. This will lead them to the intimate Chef's Table, which accommodates only 12 guests per seating. Here, diners will savor a specially curated multi-course menu that marries the ingredients of the season with the artwork on display. This experience promises an artful narrative akin to a theatrical performance, connecting the vertical spaces of the establishment into a seamless flow.
“Ouroboros” Exhibition and Dialogue between Past and Future
The inaugural exhibition at '81,' titled “Ouroboros,” presents a thought-provoking exploration of time, materials, and the cycle of regeneration through the works of various artists. This exhibit invites guests to ponder how transformations influence perceptions and invites a quiet reflection on the subtle connections between the realms of art and culinary rituals. The dynamics between gesture, material, and experience will resonate throughout the space, encouraging visitors to find mindfulness in their personal history while looking forward to the future.
The exhibition will be held from December 1, 2025, to February 28, 2026, featuring acclaimed artists such as Mamimozi, Natalie Tsuu, O’Tru no Trus, and Ryuichi Okuno.
The Visionaries Behind '81'
Kenji Nagashima’s commitment to integrating tradition with innovation is further supported by his exceptional team. Paco La Monica, the Executive Chef, brings a wealth of international culinary experiences, while Alessio Gorni, responsible for brand engagement, bridges creative concepts with client collaborations. Soy oversees the creative direction and overall operations, focusing on developing seasonal art programs in alignment with Nagashima's artistic vision.
81 is not just a restaurant; it’s a platform where culture intersects, transforming each meal into a shared ritual of creativity and connection. Through this synergy, gastronomy and art will evolve together, giving birth to expressions that could not emerge in isolation.
In an age where the boundaries between different forms of creativity are becoming increasingly blurred, '81' stands as a testament to the power of collaboration. Join us on this remarkable vertical journey that promises an endless dialogue between food and art.
