Shikoku Sake Bar: A New Concept Unveiled for Delicious Local Seafood

Shikoku Sake Bar: A Transformative Experience Awaits

On October 22 (Wednesday), the popular public tavern "Shikoku Sake Bar" located in Osaka will reopen under a new name and concept: "Wara-yaki and Tai-meshi: Shikoku No Sakaba." Operated by Brand Bank Company, a corporation based in Shinjuku, Tokyo, the tavern aims to bring more authentic flavors and stories from Shikoku's culinary landscape to its patrons.

The Backstory

Since its inception in 2017, when the first store opened in Higobashi, Osaka, Shikoku Sake Bar has been dedicated to offering various local dishes from the four prefectures of Shikoku. Each serving has been meticulously prepared to showcase the rich culinary traditions of the region. Now, with a commitment to deeper connections with producers and an enhanced focus on local products, the tavern is set to elevate its offerings.

Key Features of the Reopening

One of the highlights of the new menu includes premium ingredients sourced directly from the rich waters of Shikoku, showcasing:

  • - "Hi-Dekai Katsuo": Fresh skipjack tuna fetched daily from the port of Fukura in Ehime.
  • - "Araki's Blended Buri": A brand of amberjack raised in the pristine waters of Susami Bay.
  • - "Mirai no Tai": A sustainable sea bream cultivated with care for the environment.
  • - "Naoshichi": A rare citrus fruit known for its exceptional qualities.

In addition, a Wara-yaki (straw grilled) area will be established at the entrance, where patrons can witness the lively cooking process first-hand.

The Signature Dishes

The tavern introduces two signature dishes:

1. Wara-yaki: A feast for the senses, where skilled chefs grill each portion with care, allowing the rich aroma of the straw and the essence of the ingredients to shine.

2. Tai-meshi: A beautifully crafted rice dish made with Mirai no Tai, celebrated for its tender flesh and rich broth, bringing a gourmet experience to each bite.

The Star Ingredients

  • - "Hi-Dekai Katsuo" from Fukura Port: This unique skipjack tuna is caught and brought straight to the market on the same day, ensuring extraordinary freshness. A taste that may redefine your perception of tuna, it's a culinary experience that highlights the uniqueness of Shikoku's fishing traditions.

  • - "Araki's Blended Buri": Raised in the optimal environment where nutrient-rich waters flow into Susami Bay, these amberjacks are fed special diets that ensure their meat is rich and flavorful. This careful breeding process leads to a superior balance of taste and texture, making it a distinguished product of the area.

  • - "Mirai no Tai": Known for its Earth and human-friendly farming practices, the eponymous sea bream uses innovative feeding systems that minimize waste while maximizing fish vitality. Moreover, it aims for eco-certifications that align with sustainable aquaculture practices.
