NISHIKIYA KITCHEN Launches Limited Edition Soups Made with Tohoku Ingredients

NISHIKIYA KITCHEN, renowned for its concept of "Making Global Cuisine Easy," has unveiled two new limited edition soups as part of its Tohoku Ingredient Series. The Essence of the Tohoku Ingredient Series

The Tohoku Ingredient Series aims to showcase the rich flavors and unique characteristics of local Tohoku produce. Starting from January 2019, this initiative has gained immense popularity, boasting cumulative sales of around 198,000 servings from its inception to February 2024. As the number of yearly fans continues to grow, these premium offerings allow consumers from across the nation to savor the essence of Tohoku.

Hama no Kagayaki Onion Potage

The onion used in the "Hama no Kagayaki" is renowned for its substantial size and delightful sweetness. Grown in the fertile region of Futaba, this onion is sautéed to enhance its sweetness and blended with potatoes and cream, resulting in a creamy and rich texture. Each 160g serving is priced at ¥450 (tax included). This limited soup captures the essence of Tohoku's agricultural revival following the devastating events of the Great East Japan Earthquake.

Features of Hama no Kagayaki Onions

In the aftermath of the disaster, local farmers have been encouraged to cultivate onions to revive agriculture in areas affected by tsunamis and nuclear disasters. The climatic conditions of Futaba are ideal for onion growth, surpassing other major onion-growing regions like Hokkaido and Saga in terms of optimal temperatures. The name "Hama no Kagayaki" translates to "Shine of the Coast"—a testament to the resilience and revival of the region.

Crafting the Perfect Potage

The strong sweetness of Hama no Kagayaki onions is further elevated by sautéing them in butter, after which they are pureed into a velvety soup. Approximately 50% of the potage is made from these carefully selected onions, ensuring that the authentic taste shines through.

Nanbu Ichirou Pumpkin Potage

Each "Nanbu Ichirou Pumpkin" is nurtured with care, undergoing a meticulous ripening process that enhances its natural sweetness. This soup is prepared to achieve a smooth and silky texture, striking a perfect balance of flavors. Like the Hama no Kagayaki soup, this offering is also 160g and priced at ¥450 (tax included).

Characteristics of Nanbu Ichirou Pumpkin

This pumpkin variety is a selection of traditional Japanese "Tsurukubi Kabocha," developed into a unique Iwate breed. Its sweetness levels rival that of mangoes, with a sugar content of about 15 degrees. After being harvested, each pumpkin undergoes careful handling and ripening for about a month, enhancing its natural sweetness.

Enhancing the Natural Flavor

By leveraging the high moisture content and moist cooking qualities of the Nanbu Ichirou pumpkin, this potage includes a balanced mix of cream and onion paste, resulting in a velvety mouthfeel. Approximately 30% of the soup comes from the sweetened pumpkin puree.

NISHIKIYA KITCHEN's Commitment to Tohoku Ingredients

Since its debut, the Tohoku Ingredient Series has expanded to feature nine different products, each emphasizing the commitment to local agriculture and quality. NISHIKIYA KITCHEN strives to highlight Tohoku's exceptional produce, allowing customers across Japan to enjoy these flavors while supporting regional areas devastated by past disasters.

Not only does purchasing these limited edition items contribute to the local economy, but it also fosters a connection between consumers and the survivors of the affected areas.
