Café Unido Showcases Unique Panamanian Geisha Coffee at RAW WINE New York Event

On November 13, 2025, Café Unido, renowned for its exquisite Panamanian coffee, took center stage at the RAW WINE New York event. The gathering, which attracted more than 700 professionals from the wine and coffee industries, served to bridge the worlds of coffee and wine in a remarkable tasting experience.

Café Unido featured three fermented Geisha coffee varieties from Ninety Plus: Perci, Tigre, and Batch 23186. In addition, a natural-process Geisha from the Janson family was showcased, offering a rare opportunity to appreciate the nuances of coffee through the same lens as natural wines. This unique presentation aimed to connect both beverage enthusiasts and professionals, showcasing why the Panamanian Geisha is a standout in the coffee world.

Alejandro Carvallo, CEO of Café Unido, expressed, "RAW WINE unites people who live for origin, craft, and authenticity. These are the same people who teach others what to drink and set the tone for the industry. For us, there's no better place to show why Panama Geisha is so unique — its fragrance, volcanic terroir, and complexity." The event presented an emotional connection between coffee drinkers and the art of natural winemaking, allowing attendees to explore the intricate flavors and characteristics that define this sought-after coffee.

Award-Winning Fermentation and Terroir

Café Unido took pride in highlighting the volcanic slopes of Volcán Barú, the haven for both Ninety Plus and Janson farms. The Geisha coffees presented are known for their floral complexity and layered fermentation processes:
  • - Ninety Plus Perci and Tigre Geishas: Celebrated for their floral characteristics and multi-layered fermentation。
  • - Batch 23186: This particular lot secured the #2 position at the 2024 World Brewers Cup in Athens. It was crafted using the Criolic Folio process, which involves a cold fermentation of whole cherries infused with Geisha coffee leaves submerged in the Blue River at Ninety Plus Gesha Estates. The final cup offers a sweet Meyer lemon acidity, honey-peach notes, and a delicate mouthfeel.
  • - Janson Family Natural Geisha: This coffee stands as a pure expression of the Geisha profile, contrasting beautifully with the fermented varieties and providing a point of comparison that resonated with wine professionals.

Education Meets Experience

In addition to the tasting experience, Café Unido introduced its Coffee Handbook for Wine Professionals, the first-of-its-kind guide comparing grape and coffee production. This innovative resource aims to help sommeliers and beverage professionals better understand coffee terroir, enhancing their knowledge and appreciation for the drink. Complimentary copies were distributed to attendees, promoting an educational approach to coffee tasting.

The event marked another exciting development for Café Unido with the debut of its premium coffee-cart service. This mobile offering features top-of-the-line equipment, including dual La Marzocco machines and Mahlkönig grinders, allowing for an expert pour-over coffee experience. This service is set to become available at events across Washington, D.C., further expanding the reach of Café Unido.
