Hotel InterContinental Tokyo Bay has unveiled two exclusive premium pound cakes, available for reservation starting October 1, 2025. Located in the heart of Minato, Tokyo, the N.Y. Lounge Boutique at the hotel presents these beautifully crafted cakes that promise an indulgent experience combining rich spirits and carefully selected ingredients.

Introducing the Flavorful Cakes


The first creation is called Prestige, a classic pound cake that is infused with the renowned Hennessy X.O, a cognac widely regarded as the king of spirits. This pound cake is crafted with a careful process that involves aging, allowing the cake to absorb the complex and luxurious aromas of Hennessy X.O, which boasts over 100 different types of vintage spirits (eau-de-vie). Each slice reveals a harmonious blend of the cognac’s bold fragrance and the gentle sweetness of its ingredients, featuring large shining Tamba black soybeans and a refined sweetness from Japanese chestnuts that adorn the top of the cake elegantly.

Next up is the Pom D'Or, a masterpiece that incorporates a rare form of Calvados, specifically the luxurious Cœur de Lyon Pom Prisonnière, which has been matured meticulously with apples. About the Executive Pastry Chef


Shoya Nagai, the Executive Pastry Chef, has an inspiring journey in the culinary world. After nearly seven years at the Imperial Hotel’s pastry kitchen, where he developed numerous new products, he ventured out on his own. His experience includes consulting roles and teaching at culinary schools. He also played an integral role in launching the second branch of Thierry Chocolates in Canada.
Since joining Hotel InterContinental Tokyo Bay as an Assistant Pastry Chef in January 2022, he has been involved in developing menus and items for the hotel's restaurants and shops. Starting June 2024, he will take the lead as the Executive Pastry Chef, continuing his creative approach to pastry, believing that each creation is a form of art with its unique expression.
