Meeting the Nutritional Challenges


As the population ages, it becomes increasingly crucial to address two key challenges: nutrition and workforce shortages in care facilities. Shidax's initiative, known as "Genki Gohan with Oisix," focuses on providing conducive nutritional support in manageable portions that seniors can easily consume. Notably, the "Sugokaro" series enables elderly individuals to achieve their required caloric intake with around 80% of conventional serving sizes. The introduction of soups into this dietary model aims to boost daily nutritional intake without overwhelming the dining experience.

Taking inspiration from LacuS's "Me SOUP" series, the Sugokaro Soup enhances nutritional value through strategic innovation. The development process honed in on three critical aspects:
1. Swallowability: Ensuring the soup aligns with the swallowing capabilities of seniors.
2. Taste: Maintaining flavor integrity while enhancing nutritional content.
3. Operational Efficiency: Simplifying the preparation process to reduce the burden on kitchen staff.

During development, specific challenges arose. Enhancing protein content sometimes resulted in texture issues like cloudiness or graininess. To counter these effects, LacuS meticulously optimized protein combinations and cooking conditions to achieve a smooth, velvety soup. This endeavor spanned approximately six months, ultimately generating a product that balances nutrition and taste beautifully.

Exciting Variants of Sugokaro Soup


The Sugokaro Soup lineup includes three delightful flavors: "Sweet Corn Potage," "Rich Pumpkin Potage," and "Miso Soup with a Hint of Dashi." Each variant significantly boosts nutritional content compared to previous soups offered under the Genki Gohan initiative, enhancing caloric content by 30-50 kcal and protein by 1.5-4g per serving. The potage varieties will begin distribution in October, with the miso soup expected in November.

Operational Benefits Through Powdered Soup


Beyond fortifying nutrition, the development team prioritized ease of use within kitchen settings. The growing demand for personalized meal responses amidst staffing challenges presents a significant issue for senior care facilities. The Sugokaro Soup adopts a user-friendly powdered format that only requires mixing with hot water for preparation, streamlining the cooking process and alleviating staffing burdens.

Research Insights


A survey conducted among 190 nutritionists and facility staff from various senior care establishments indicated a pressing need for enhanced meal solutions. The feedback gleaned during this period underscored the challenges faced in meeting the dietary needs of residents effectively.

As the rollout of Sugokaro Soup begins, Shidax aims to support facilities in achieving both deliciousness in food and alleviation of staffing issues. From September 2026, in collaboration with Oisix, the offering will extend beyond contracted facilities to those operating independently, thereby enhancing flexibility in food service operations.
