KAMIKATZ TAPROOM Reopens with Italian Cuisine and Craft Beer in Tokyo

Exciting Renewal of KAMIKATZ TAPROOM



On July 17, 2025, KAMIKATZ TAPROOM, managed by RISE & WIN Brewing Co., is set to unveil its transformed interiors and renewed menu in the heart of Tokyo's Higashiazabu. After its inception in 2015 within the zero-waste initiative of Kamikatsu, Tokushima Prefecture, the brewery has gained notoriety for its commitment to sustainability and delicious craft beers. The redesign is in celebration of the brewery's 10th anniversary, aiming to deepen the connections between local resources and urban dining experiences, encapsulated in the theme, Local Roots, Urban Table.

The renovated TAPROOM’s menu will feature an entirely reimagined selection of Italian dishes crafted to pair exquisitely with RISE & WIN's original beers. Emphasizing the local ingredients of Tokushima and Shikoku, the restaurant will highlight the ethos of zero waste. Visitors can expect to indulge in various dishes while enjoying RISE & WIN's original Kamikatsu Beer on draft, alongside eight other offerings showcasing seasonal ingredients and Misfit produce from Kamikatsu.

The unique The Barrel series of craft beers, aged in whiskey barrels, will also make its appearance in this refreshed venue. Recipes designed for optimal beer pairings by Chef Taira Omotehara of the local auberge PERTORNARE will summon the flavors of Kamikatsu’s fresh, seasonal produce, all while advancing the zero-waste initiatives by incorporating reRise vegetables—specially cultivated crops that embody the brewery's positive resource circulation approach.

In conjunction with this reopening, the TAPROOM will also debut the reRise IPA 2025, a cycle-complete craft beer, which epitomizes the circular resource dynamics that RISE & WIN strives for. The IPA draws on a resource cycle where byproducts from brewing become liquid fertilizer, subsequently nourishing the very barley used for the beer’s production. Marking a luminous moment in the brewery’s history, this IPA embodies well-rounded tropical notes, making it a summer favorite.

Tatsuya Tanaka, the CEO of RISE & WIN, envisions this renewed space as a bridge connecting local nature, culture, and urban dining. He stated, “Through the TAPROOM, we hope to bring experiences that are not only delicious but also contribute to a better future.” Tatsuya Tanaka has dedicated nearly a decade to championing the zero-waste philosophy and social enterprise development in Kamikatsu.

Culinary Highlights of the New Menu


Under the direction of Chef Taira Omotehara, the menu will also showcase a range of delightful dishes including:
1. Grilled Kamikatsu Amego with Honey Mustard Sauce — This dish features a rare freshwater fish, Amego, grilled to perfection and infused with herbs, presenting a unique taste of Kamikatsu.
2. Today's Fish Carpione — Fresh fish from the Tokushima market is fried and marinated with vibrant red onions for an exquisite version of Italian-style marinated fish.
3. Kamikatsu Shitake and Salsa Verde Burger — Featuring thick Kamikatsu shiitake mushrooms and Italian mozzarella, this burger is a gourmet take on a classic.
4. Carbonara with KItarra Pasta — A traditional carbonara using local eggs without cream, combined with a robust texture of KItarra pasta for a delightful mouthfeel.
5. Zabaione — A gluten-free Italian dessert made with leftover beer, showcasing sustainable culinary practices.

The TAPROOM also embraces local artisans, incorporating exquisite handmade ceramics from local potters, ensuring that not just the food but also the dining environment resonates with Kamikatsu's culture and values.
