Despite experiencing intense water stress, the beneficial rains in early September facilitated the grapes' ripening process.
From the vineyards in Mareuil-sur-Aÿ, Aÿ, and Avenay, the grapes were harvested under nearly perfect conditions. The yield was low to moderate, while the fruit displayed concentrated flavors. Notably, the grapes achieved maturity without surpassing optimal ripeness, and the potential alcohol content ranged between 11% to 12% for Clos des Goisses.
Vinification Process
