Introducing Agua Mágica's High-Proof Mezcal: Espadín Capón



Agua Mágica, in collaboration with Frederick Wildman & Sons, reveals its first high-proof mezcal targeting cocktail enthusiasts. Known for its bold character, Espadín Capón is a 90-proof spirit crafted specifically for cocktail programs, making it an exciting addition to the mezcal market.

This unique mezcal is crafted by Julio Juan, a sixth-generation mezcalero and son of Don Rogelio, who is well-known for creating Agua Mágica's signature sipping mezcal. Espadín Capón reflects a new direction in production philosophy, incorporating innovative techniques such as hotter roasting temperatures and distillation processes that utilize active fermentation. These advancements contribute to a mezcal with a peppery flavor, distinct aromatics, and a robust structure—perfect for a variety of cocktails, from Spicy Margaritas to Oaxaca Old Fashioneds.

Rafa, the founder of Agua Mágica, shared insights about the product's origins, stating, "This product was born from trade feedback—created with the invaluable input of bartenders who expressed their needs for more proof, character, and profitability. We developed Espadín Capón in partnership with them."

The mezcal is produced in San Juan del Río, Oaxaca, using mature Espadín agaves through the traditional capón method, which involves cutting the flower stalk before it blooms to enhance sugar concentration in the piña. Amid current market dynamics, characterized by a decrease in demand and an abundance of mature agaves, Agua Mágica has managed to create an exceptional mezcal while remaining affordable. The meticulous production process includes milling with a stone tahona, wild fermentation in open-air pine vats, and double distillation in copper stills, resulting in a spirit that maintains its integrity without compromising quality.

Using natural mountain spring water, Espadín Capón has an alcohol content of 45% ABV (90 proof) and is retail-priced at $43.99. This competitive pricing places the mezcal precisely between mass-market and ultra-premium options, presenting an artisanal choice that also remains profitable for bars and restaurants.

As part of an exclusive distribution agreement with Frederick Wildman & Sons, which has a reputation for representing prestigious brands like Chartreuse and Pol Roger, Agua Mágica's Espadín Capón reinforces the brand's credibility within the mezcal industry.
