About Chanko Edosawa
Founded in 1974, Chanko Edosawa has inherited traditional recipes from its founder, a former sumo wrestler. Our commitment to authentic
chanko-nabe (sumo stew) is reflected in our use of high-quality ingredients, particularly from traditional
hi-ne or old chickens, which provide rich flavor for our broth. We offer three variations of our signature soup: soy sauce, miso, and salt flavors, made from expertly balanced recipes.
Our Triple Commitment:
1.
Chicken Soup Nabe
Historically, sumo stables mainly had a fish-based diet due to financial constraints. Meat consumption was limited, especially four-legged animals, which were considered bad luck. In contrast, poultry was viewed as auspicious. Thus, we prepare our
chanko-nabe using whole
hi-ne chicken, slow-cooked in our special chicken broth, ensuring a depth of flavor not found elsewhere.
2.
Attention to Ingredients and Broth
We pride ourselves on providing generous portions of
chanko, ensuring a satisfying meal. With a focus on taste and nutrition, our pot features a careful selection of 12 fresh ingredients. Our broth, cooked daily with chicken bones every morning (twice daily in winter), is enriched by the natural flavors from various vegetables.
3.
A Modern Japanese Dining Space
Our restaurant combines traditional Japanese aesthetics with modern design, featuring calming wood finishes and tatami mats. The décor includes sumo artwork, making it a favorite spot for international guests to experience Japanese culture while dining. We have multiple private rooms suitable for various gatherings.
