VERTERE, a craft brewery located in Okutama, Tokyo. Celebrating its 10th year in brewing, VERTERE is on a mission to redefine sustainability in beer production through an ambitious crowdfunding initiative known as the
Upcycling Hop Project.
The Project's Inspiration
This project stems from a profound understanding of the wastefulness that often accompanies the brewing process. During beer production, significant amounts of plant-based waste such as malt spent grains and hop residues are generated. While malt spent grains can be repurposed as animal feed or fertilizer, hop residues, regrettably, are often discarded due to their inadequate nutritional value for livestock. This inefficiency not only leads to environmental waste but incurs disposal costs, which can amount to about 40 yen per kilogram in Tokyo.
Recognizing the potential in these discarded hops, VERTERE initiated the Upcycling Hop Project. By breathing new life into used hops—retaining their aromatic qualities—VERTERE aims to create a distinctive range of beers while minimizing waste.
Collaborative Endeavors
The project is supported by two key partners:
ASTRA FOOD PLAN, which provides drying technology, and
Euglena Co., Ltd., an established company in upcycling alcoholic beverage residues. This collaboration illustrates how businesses can come together to promote sustainable practices across industries.
Since its launch on March 26, the Upcycling Hop Project quickly reached its initial goal of 500,000 yen, achieving an impressive 269% funding by May 2, with a total of 1,349,100 yen and 217 supportive backers. This overwhelming support reflects public enthusiasm for sustainable brews and the acknowledgment of the issues related to food waste.
Innovative Brewing Techniques
As part of this project, three unique beers have been crafted using the upcycled hops:

Sustainable Hop Blonde: A refreshing beer with floral and honey aromas, complemented by a hint of cinnamon. Known for its light body and mild bitterness, it's an inviting choice for those seeking a fragrant, easy-to-drink option.
2.
Sustainable Hop Saison: This variant features aromas reminiscent of banana, clove, and lemongrass. The yeast character enhances the hop profile, leading to a clean finish that is both light and satisfying.
3.
Sustainable Hop IPA: A delightful balance of citrus and apple aromas creates a vibrant flavor experience. Notably, the use of upcycled hops brings forth a refreshing note of herbs and a distinct uniqueness that sets it apart from traditional IPAs.
The transformation of used hops has not only led to distinctive new flavors but has also resulted in the reduction of waste that would otherwise burden the environment.
The Future of Beer Production
As this crowdfunding campaign continues until May 18, 2025, VERTERE has ambitious plans for the future. Looking beyond hops, the next step includes finding value in malt spent grains. Given the larger volume produced during brewing, VERTERE is exploring avenues to upcycle these grains into food products, possibly even producing sausages from the pork raised on these grains.
