Since its inception, Sushi Kagerou has captivated over 19,000 customers, evolving from the two-course system—Sushi Kagerou’s 15-piece course and a more elaborate 16-item course—into a unified experience that adheres closely to the authentic Edomae sushi omakase tradition. The aim is to provide diners not only with sushi but with an orchestrated dining rhythm that intersperses pieces of sushi and seasonal delicacies.

What is the Sushi Kagerou Project?



Inspired by the ephemeral beauty of the “kagerou” (mayfly), which emerges briefly before disappearing, the Sushi Kagerou Project symbolizes the fervor and dedication of emerging sushi chefs. It’s a practical initiative designed to nurture and train the next generation of sushi artisans. With guidance from an experienced team that has crafted renowned establishments such as Sushi Asahi and Sushi Muku, the project offers high-quality Edomae sushi made with red vinegar rice and seasonal fish directly sourced from Toyosu.

Staff members personally procure ingredients early in the morning at Toyosu Market, ensuring not only top-quality produce but also sustainable pricing. This dedication makes gourmet sushi accessible without compromising quality.

Reservations are required in advance, and once the limit is reached, further bookings will be closed. Water and beverages can be ordered separately from the parent establishments, Sushi Muku and Shirogane.
