Gabu Harajuku's Innovative Tonkatsu Experience
GAVRIFOOD has officially opened the second branch of their popular restaurant, "Tokyo Tonkatsu Gabu Harajuku," located in the bustling heart of Shibuya, Tokyo. Riding on the success of their first restaurant in Ueno, which made it to the "Tonkatsu Hundred Best" list within just 10 months of opening, Gabu Harajuku is set to deliver an exciting dining experience that redefines the traditional tonkatsu meal.
At Gabu Harajuku, lunchtime features a classic set meal style, while dinner transitions into an exclusive, reservation-only course featuring a guaranteed minimum of 15 dishes. This duo of dining experiences aims to introduce a novel way to enjoy tonkatsu.
A Variety of Tastes
Dinner is where Gabu truly shines. Guests will be treated to four different types of high-quality pork, which changes daily based on the freshest market picks. Diners will have the chance to sample a variety of cuts, including premium loin, fillet, belly, and more. Each cut is served as a small portion, allowing for a delicious comparison of flavors and textures throughout the course.
The meal begins with the signature "Gabu Special Pork Burger," followed by various dishes such as chawanmushi (steamed egg custard), scallop fritters, seasonal specialties, and a unique honey ham toast, among others.
What sets Gabu apart is its unexpected finale: a refreshing cold ramen dish, challenging the conventional idea of finishing a tonkatsu meal with rice. This dish embodies Gabu's philosophy that tonkatsu can be experienced as a course, rather than a simple plate of fried meat.
Redefining Tonkatsu Dining
Traditionally, tonkatsu has been enjoyed as a single plate with rice, miso soup, and cabbage. However, the rise of specialty tonkatsu restaurants has introduced a wider range of flavors, focusing on different breeds and cuts of pork. Gabu Harajuku aims to take this trend further by reconstructing how tonkatsu is presented.
The courses are more than just heavy plates of meat; they involve a thoughtful integration of differing pork breeds and cuts, varying cooking methods, and textures that challenge the palate. Diners will not only indulge in the rich flavors of tonkatsu but also appreciate its culinary craftsmanship.
The dinner experience is designed with variety in mind. By utilizing multiple breeds of pork daily, Gabu allows guests to enjoy a constantly changing menu shaped by the best available ingredients. The dishes evolve with the seasons, ensuring each visit is unique.
Each dinner is a celebration of tonkatsu’s versatility, where guests can expect a carefully curated menu featuring innovative culinary inventions crafted by Gabu's expert chefs.
Emphasis on Experience Over Cost
The pricing reflects Gabu Harajuku’s commitment to value. The dinner course costs 14,850 yen (tax included), which includes not just 15 dishes but also unlimited drinks—alcoholic and non-alcoholic—without surprise extra charges.
This all-inclusive dining experience is crafted to ensure that diners can fully immerse themselves in the course without the worry of additional costs, focusing instead on the journey of flavors that unfold with each serving.
A Cultural Fusion
Placed in the vibrant area of Harajuku, a hub for fashion, music, and art, Gabu connects this cultural energy with Japan's beloved tonkatsu—a dish that has been enjoyed by locals for over a century. By combining these two worlds, Gabu aims to showcase new ways to appreciate tonkatsu, offering a balance of everyday comfort and high-end dining.
This restaurant doesn't just serve food, but rather an innovative cultural experience that encourages diners to engage with the heritage of tonkatsu while exploring its modern transformations.
Grand Opening Campaign
To celebrate the restaurant's grand opening, Gabu Harajuku is launching a promotion where customers at their Ueno location receive redeemable cards for Gabu's special black truffle dressing—a gourmet condiment typically sold for 1,080 yen. This promotion will run until November 30, 2026, or until supplies last, adding more excitement to Gabu's expanding culinary presence.
GAVRIFOOD's President, Yasuhiko Onuma, has emphasized the mission of not just recreating their previous success but pushing forward to discover the next evolution of tonkatsu dining. Gabu Harajuku presents a fresh narrative in the tonkatsu story, making every meal a memorable experience.
Whether you're a tonkatsu aficionado or a curious newcomer, the unique culinary journey awaits you at "Tokyo Tonkatsu Gabu Harajuku."
