Hotel New Otani Tokyo is thrilled to announce the upcoming "THE GASTRONOMY" fair, showcasing the culinary brilliance of renowned chef Shinichi Sato. This event celebrates the 19th edition of the fair dedicated to Japanese chefs making their mark globally, featuring the exquisite gastronomic creations from his Michelin-starred restaurant, 'Blanc.' The special event will take place over two days on December 27 and 28, 2025.

Chef Shinichi Sato, born in Hokkaido in 1977, began his culinary journey in France at renowned restaurants such as Astrance, Pierre Gagnaire, and the Spanish culinary icon, Mugaritz. He opened his own establishment, Passage 53, in Paris’s 2nd arrondissement in 2009. Chef Sato became the first Japanese chef to earn two Michelin stars in 2011, a title he held for eight consecutive years. He closed Passage 53 in 2019 for new challenges and opened 'Blanc' in the 16th arrondissement of Paris in October 2023, quickly earning two Michelin stars in the 2025 guide.

The name 'Blanc' translates to “white” in French, symbolizing a blank canvas. This allows Chef Sato to create dishes that reflect his deep exploration of flavors, emphasizing the purity and delicacy of ingredients. Each creation marvelously balances traditional French culinary techniques with innovative concepts, captivating gourmands from around the globe.

Located at the historic site of Henri Faugeron’s Michelin two-star restaurant, 'Blanc' embodies a rich legacy. The interior was designed by renowned architect Kengo Kuma, providing a spectacular atmosphere reminiscent of a modern art venue.

A History of Gastronomy at Hotel New Otani


Since its opening in 1964, Hotel New Otani has significantly contributed to the development of Japanese culinary culture, bringing global restaurant scenes to its guests. The hotel launched the grand Parisian establishment, Tour d’Argent Tokyo, in 1984 and has hosted collaborative culinary fairs with renown chefs, including a collaboration with culinary giant Alain Ducasse in 1998. The Gastronomy Fair, initiated in 2015, has showcased 18 acclaimed chefs and introduced innovative experiences to Japan’s culinary landscape.

The inaugural fair featured Chef Shinichi Sato, making this upcoming event particularly special as he returns with his latest offerings from 'Blanc,' two years after its grand opening.
