The S.Pellegrino Young Chef Academy is once again on a quest to unearth exceptional culinary talent as it approaches the 2026-27 competition cycle. Individuals under 30 years of age are encouraged to capture the judges’ attention by presenting their unique signature dish, reflecting both technical skill and profound creativity. The application window remains open until June 9, 2026, allowing aspiring chefs ample time to craft their culinary masterpieces.

As part of the competition's evolution, the U.S. Regional Final is poised to feature an impressive jury formed by five culinary luminaries. They are:

  • - Isabel Coss (Executive Chef, Pascual; Executive Pastry Chef, Lutèce, Washington, D.C.)
  • - Ryan Ratino (Chef/Owner, Hive Hospitality, Washington, D.C.)
  • - E.J. Lagasse (Chef, Emeril’s, New Orleans)
  • - Jon Yao (Chef/Owner, KATO, Los Angeles)
  • - Fariyal Abdullahi (Executive Chef, Hav Mar, New York City)

The journey begins as each submission is rigorously evaluated by ALMA, The International School of Italian Culinary Arts, to shortlist candidates who will partake in the 15 Regional Finals held globally. The selected chefs will then face the esteemed jury, who will assess the flavor, technique, and creativity of the presented dishes.

Judging Criteria



Each dish will be measured against three golden criteria, rated on a scale of 1 to 10:

1. Technical Skill: Judges will examine the contestant's ability to manipulate various raw materials, focusing on their selection, preparation, cooking techniques, and flavor balance.
2. Creativity: Chefs will need to showcase their culinary identity through innovative approaches, merging aesthetics and taste to communicate a story with their cuisine.
3. Personal Belief: Beyond recipe execution, contestants must convey their culinary philosophies and aspirations through their dish, reflecting on culinary values and responsibility towards the evolving culinary landscape.

The ultimate winner from the U.S. Regional Final will earn a coveted spot in the Grand Finale, set to take place in Milan in 2027. Here, they’ll compete against a global cohort of outstanding young chefs for the prestigious S.Pellegrino Young Chef Academy Award. In conjunction with this main accolade, there will be three additional awards:
  • - The S.Pellegrino Social Responsibility Award, decided by the Sustainable Restaurant Association.
  • - The Acqua Panna Connection in Gastronomy Award, influenced by the competition mentors.
  • - The Fine Dining Lovers Food for Thought Award, as selected by Fine Dining Lovers' insiders.
