On June 28th, 2025, at 14:00 JST, Kikkoman International Food Culture Center will host a unique culinary lecture titled "The Colors of Edo Cuisine: Secrets of Katsuobushi's Deliciousness". This event will take place at the KCC Hall at Kikkoman's Tokyo headquarters and will also be available for free on YouTube.

Katsuobushi, or dried bonito flakes, is an indispensable ingredient in Japanese cooking. The combination of katsuodashi (bonito stock), soy sauce, and mirin has driven the flourishing of Edo cuisine. While many enjoy the convenience of fresh-packed katsuobushi, few may know how it is made. This is an excellent opportunity to delve into the world of katsuobushi and enhance your understanding of Japanese culinary traditions.

The session will feature Mr. Nozomu Oginome, a representative from NINBEN Co., Ltd., who brings a wealth of knowledge in katsuobushi production. Following his presentation, participants at the venue will experience tasting katsuobushi dashi, a true highlight for any food enthusiast.

In-person attendance is limited to 28 participants, and the event will be open to those interested in joining via YouTube Live stream. To access the live stream from home, participants must register in advance. After signing up, all registrants will receive a unique URL to view the event. The recorded sessions can be accessed until August 29, 2025, offering a fantastic opportunity to revisit this informative lecture at your convenience.
