From August 2, 2025, this luxurious treat will be available exclusively at the Patisserie Minimal in Soshigaya-Okura, presenting a perfect combination of seasonal ingredients and exquisite flavors.
A Celebration of Freshness
The Peach Vacherin Glacé stands out with its star ingredient - sweet and juicy seasonal peaches. This delightful dessert is inspired by the classic French Vacherin glacé, which features meringue that encases creamy ice cream and fresh fruit. At Minimal, the white peaches are carefully poached and paired with raspberry and kurokoji (black twig) ice cream to create a dish that embodies the essence of summer.
As a final touch, a luscious drizzle of fruit-forward chocolate sauce made from Madagascar cocoa beans brings an additional layer of flavor, enhancing the overall experience.
A Symphony of Flavors and Textures
This dessert's standout feature is the beautifully poached juicy white peach that is gently enveloped by the kurokoji ice cream, which is richly flavored with citrus and woody notes. This combination perfectly elevates the subtle sweetness of the peach, making it a quintessential summer dessert.
