This delectable combination is topped with a refreshing pink cherry sorbet and a beautifully marbled mix of red and white cassis sorbet along with coconut ice cream.

Meet the Pastry Chef



The creation of the Cherry Red Parfait is a testament to the skills of head pastry chef Yuji Takahashi. With a passion for confectionery that started in his childhood, he embarked on a journey into the realm of pastry arts. After graduating from a culinary school, he honed his craft through five years at The Capitol Hotel Tokyu, focusing on baking and pastry basics. His career progressed as he took on the role of junior sous-chef at The Ritz-Carlton, Tokyo, before assuming the prestigious position at The Strings Omotesando in May 2017.

Chef Takahashi emphasizes utilizing seasonal flavors and ingredients, paying equal attention to aesthetics and dish presentation. His work is inspired by creating entertaining desserts that everyone can enjoy — a vision he realizes beautifully with the Cherry Red Parfait.
