Hilton Tokyo is set to enchant food enthusiasts with a unique gastronomic popup event on December 4 and 5, 2025, featuring renowned Michelin-starred chef Zor Tan from the acclaimed Singapore restaurant BORN. The event will be hosted in the elegant Metropolitan Grill located on the second floor of the Hilton Tokyo.
Zor Tan is celebrated for his innovative approach to contemporary cuisine, harmonizing the delicate techniques of French cooking with the rich traditions of Chinese culinary art. The theme for this special popup is “The Circle of Life,” reflecting the interplay of memory, emotion, and change through each course. Diners will not only indulge in exquisite flavors but also embark on a narrative journey crafted with every dish served.
Meet Zor Tan: A Culinary Innovator
Chef Zor Tan, a Malaysian native, has honed his culinary skills over the past 20 years, working in some of Asia's top restaurants. He began his illustrious career under the tutelage of André Chiang at the legendary Restaurant André in Singapore, where he excelled as an Executive Chef, contributing to the restaurant’s Michelin recognition and its inclusion in the World’s 50 Best Restaurants list.
Tan later led the kitchen at Sichuan Moon in the Wynn Palace, Macau, where he innovated modern Sichuan cuisine, earning the restaurant its two Michelin stars and a ranking of 23rd in the Asia's 50 Best Restaurants in 2020. In 2022, Tan opened BORN, situated in Singapore’s historic rickshaw station, which quickly garnered a Michelin star within its first year and was ranked 25th in the Asia's 50 Best Restaurants 2024.

At Hilton Tokyo’s popup, Chef Tan will collaborate with the hotel’s culinary team to elevate nine guiding principles: Birth, Roots, Memories, Craft, Relationship, Vicissitudes, Time, Progress, and Legacy. These principles are infused into the dining experience, making each course a reflection of his cultural background, personal journey, and culinary heritage.
As Tan eloquently puts it, “Cooking is the purest form of storytelling.” The special menu will remain under wraps until service, allowing diners to experience the surprise and delight of every course.
