From August 4 to October 10, 2025, The Capitol Hotel Tokyo will be hosting an exclusive 'Otaru Ingredients Fair' at its Chinese restaurant 'Hoshigaoka'. This limited-time offer, available for dinner on weekdays, showcases the best of Hokkaido's local produce, brought together with inspiration gathered by the chef from various farming communities across Japan.

The Otaru region, known for its rich history and beautiful landscape, comes to life through the chef’s curated course meals that encapsulate the essence of Hokkaido. Traveling through the Shiretoko region, where Otaru is located, the chef immersed himself in the local culture, conversed with farmers, and harnessed the region's fresh air and vibrant nature to create a dining experience that echoes the harmony of the land and its people.

Some standout ingredients include the 'Otaru Jidori', a free-range chicken known for its rich flavor, and 'Kitajima Wine Pork', raised on a diet enriched with Yoichi wine—a delicacy rarely found outside of Hokkaido. These exclusive ingredients, along with the premium 'Kazunoko' from Otaru’s beachfront, fresh Herring, Daikon, and Melon, create an exquisite menu, highlighting the treasures of the Shiretoko region.

One of the highlights on the menu is the new potatoes from Shiretoko, crafted into a honeycomb fry to mimic the famous Ezo Fuji, or 'Mount Yotei'. This dish is delicately paired with a refreshing chili sauce made from ripe cherry tomatoes sourced from the town of Niki.

Furthermore, the 'Kitajima Wine Pork'—nurtured in the scenic surroundings of Yoichi while drinking red wine—offers a tender texture and rich fat. Resonating with producers who are committed to delivering “safe and truly delicious” food, the chef elevates this pork into a signature 'Tonpōro' dish, a hallmark of Chinese cuisine showcased at Hoshigaoka.

Guests can also enjoy a carefully curated wine pairing set featuring wines from a local Otaru winery operated by a couple. This enhances the culinary journey, making each bite resonate with the region’s personality.

Chef Takayuki Yamahashi, who leads this endeavor, shares, “The journey across the Shiretoko region has allowed me to encounter many wonderful ingredients that are cultivated with great care while coexisting with nature. The atmosphere, landscapes, and producers' sentiments that I absorbed during my travels are encapsulated in these dishes. I hope our guests can experience the essence of Otaru through this culinary adventure.”

About Chef Takayuki Yamahashi


Born in Shimane in 1978, Chef Yamahashi has devoted his career to mastering Chinese cuisine, starting in Yokohama's Chinatown and training extensively in China. After returning to Japan, he led kitchens at various Chinese restaurants and became the chef of 'Hoshigaoka' in 2010. He has won numerous awards, including gold and silver at national competitions and recognition as a leading chef in Tokyo. He is committed to preserving traditional Chinese culinary arts while incorporating techniques from Japanese and Western cuisines.
