Experience the Best of Both Worlds at Ren
In the heart of Nishiazabu, Tokyo, Ren is redefining culinary boundaries by combining the powerful flavors of Chinese cuisine with the delicate techniques of French cooking. Starting July 20, the restaurant will introduce a limited-time special course featuring Kagoshima's renowned "miyakukiken" eel, sourced from Yamata Suisan. Known for its superior quality, this eel is raised without antibiotics, allowing its natural flavors to shine.
A Unique Culinary Experience
Ren’s latest offering highlights the rich, fatty sweetness of the eel, which is carefully nurtured in Kagoshima's warm climate and pristine groundwater. The eel delivers a tender texture, clean taste, and subtle sweetness that has earned the admiration of chefs across Japan. With this special course, only available until July 31, guests will have the chance to savor each dish crafted to showcase the eel's remarkable qualities through innovative cooking techniques.
The course features an exquisite lineup of dishes, including:
- - Eel Burger: A creative take on classic flavors, reimagined in a modern format.
- - Eel Tamago (Egg): A beautiful fusion dish celebrating the synergy of ingredients.
- - Eel and Makomotake Spring Rolls: Crispy delights that highlight seasonal Japanese ingredients.
- - Stir-fried Eel with Tofu Eggplant: A robust dish that emphasizes the umami of the eel.
- - Eel and Foie Gras Puff Pastry: A sophisticated presentation that marries luxury with tradition.
With each dish, the restaurant aims to extract the eel's aroma, fat, and umami using distinct approaches, celebrating the fusion of French and Chinese culinary arts. The result is an entirely new flavor profile that challenges traditional boundaries and offers diners a fresh perspective on eel dishes.
The Concept of Ren
Named for the lotus flower, which symbolizes purity and strength in Chinese culture, Ren seeks to embody these ideals in its cuisine. The lotus emerges clean from muddy waters, just as the restaurant strives to elevate traditional Chinese flavors with French finesse.
Chef Hiroshi Nakagawa, an accomplished culinary artist, leads the kitchen at Ren. With a background that includes honing his French cooking techniques at prestigious establishments like the Imperial Hotel and Restaurant T3, Chef Nakagawa has also explored the depth of Chinese cuisine through his training at Series. In 2022, he was honored with the Silver Egg Award at the prestigious RED U-35 Young Chefs Competition. Holding a sommelier qualification, Chef Nakagawa is passionate about crafting a culinary narrative that connects each dish to its ingredients and complements them with perfectly paired beverages.
