An Update on a Beloved Japanese Sauce
Kenko Mayo Co., based in Suginami, Tokyo, has partnered with Sankuzer, headquartered in Iizuna, Nagano, to co-develop a special mayonnaise sauce designed for heat preparation. This collaboration aims to revamp the much-loved "Iburi Gakko Tartare" sauce offered at Sankuzer’s popular 久世福商店 (Kuzefuku Shoten) stores. This revamped version is set to hit the shelves on September 1, 2025.
The Motivation Behind the Collaboration
Kenko Mayonnaise has always strived to meet market demands by adapting its products to various culinary environments. With years of experience in product development, the company is dedicated to solving customer challenges. Sankuzer’s philosophy of enhancing the value of delicious food from across Japan resonated deeply with Kenko’s mission. This synergy between the two brands facilitated a fruitful collaboration, leading to the creation of a unique mayonnaise sauce.
The Development Journey
Our primary goal in this update was to achieve a "more natural deliciousness." From the outset, we received positive feedback about the distinct flavor of our mayonnaise, and we focused on maintaining this base taste during development. This led us to re-evaluate the selection of ingredients to maximize the richness of egg flavors while creating innovative combinations.
Moreover, we aimed to enhance the smokiness of the Iburi Gakko and the rich flavor characteristic of tartare sauce.
However, during the development process, we faced significant challenges. One of the major hurdles was ensuring that the mayonnaise could withstand unavoidable high-temperature cooking processes. Striking a balance between retaining the natural flavors of the ingredients while minimizing additives was crucial. The development team worked diligently to create a "heat-resistant mayonnaise sauce" that would not separate or alter in texture or taste.
To improve the heat resistance while preserving flavor, we meticulously reviewed the ratios of oils, vinegars, and other seasonings within the formula, investing considerable time into making the perfect blend.
Through collaborative efforts, both companies successfully developed a product that satisfies all criteria of heat resistance, viscosity, and flavor balance. After nearly a year of extensive tests and approximately more than 30 trials, we are thrilled to have produced a product that meets our strict standards and fulfills our collaborative vision.
