On July 26, 2026, the historic Kiuchi Brewery, known for its commitment to locally sourced ingredients, will host a special seminar at BAR Shinjuku Whisky Salon. From 15:00 to 16:30 (registration starts at 14:30), participants will have the chance to engage with Mr. Toshiyuki Kiuchi, the CEO of the brewery, and explore the rich story behind Hinomaru Whisky.

This seminar will not only delve into the intricate story behind Hinomaru Whisky, which utilizes locally sourced materials nurtured by the abundant nature of Ibaraki Prefecture, but also feature exceptional pairings with original hams crafted by Hitachino Ham Workshop. About Mr. Toshiyuki Kiuchi


Mr. Kiuchi, who succeeded the family business of sake brewing after graduating from university, emphasizes a philosophy of “brewing rooted in the soil of Hitachinaka.” Since the establishment of the brewery, he has consistently focused on utilizing local ingredients and preserving the historical essence of the land. In 1996, he introduced Hitachino Nest Beer, and in 2020, he established the Hagyo Distillery in Ishioka, Ibaraki, setting up a solid production system for whisky. As of 2023, they have opened their own malt factory, continuing their commitment to creating Japanese craft whisky using domestic ingredients.

Kiuchi Brewery's Hagyo Distillery Overview


The Hagyo Distillery, operational since 2020 at the foothills of Mount Tsukuba, utilizes both pot stills and column stills to create a variety of whiskies, incorporating malt whisky as well as barley, wheat, and domestically grown rice from Ibaraki Prefecture. With the establishment of its own malt factory in 2023, the brewery has achieved an unparalleled ability to cultivate and process barley for its Japanese whisky production. Additionally, the facility includes a visitor center and a ham workshop, allowing guests to shop and dine on-site.
